cabbage boat salad w/ basil tangerine dressing

a cabbage boat doesn’t come close to describing the delight this dish brings.  i eat a salad pretty much every day. this is my way of having all the benefits of one, but not in the same old way.  it’s a refreshing change from having  the lettuce on the end of a fork kind of salad. i love the crunchiness of the cabbage, chewiness of the raisins, the creaminess of the avocado, and the flavor of the herbs. sweet salty, spicy and medicinal.

basil has anti bacterial anti inflammatory with many vitamins and minerals. orange juice has the vitamin C we need to add to our intake every single day and tahini has calcium for strong hair, teeth nails and bones. cilantro pulls out heavy metals.

cabbage boat salad w/ basil tangerine dressing

salad ingredients:

4 – 5 cups mixed greens
handful cilantro
3 chard leaves
1 avocado
red cabbage leaves
raisins
sunflower seeds
hot sauce

dressing ingredients

1 bunch basil
2 tangerines
1 lemon, juiced
2 – 3 tablespoons tahini
1 ½  tablespoons olive oil
½ teaspoon garlic powder
pepper
pinch pink salt

instructions

Chop chard, mixed greens and cilantro and put in large bowl.  Dice the avocado and set aside.  Put peeled tangerine sections, lemon juice, basil, olive oil, tahini, garlic powder, pepper and salt into mini-processor and blend. Then add dressing to salad and mix.  To serve put salad on large red cabbage leaves and top with avocado, raisins, sunflower seeds and hot sauce.

feel free to substitute the following:
cranberries for raisins
almond or nut butter for tahini
pumpkin seeds for sunflower seeds.
any kind of greens will do 🙂
